Recipe Name: 10 Minute Grilled Shrimp & Tomato Panzanella

  • Ingredients:

    • 1 lb raw shrimp
    • 3 roma tomatoes chopped
    • 1 lemon
    • 1/4 cup white wine
    • 4 cloves garlic minced
    • 2 slices sourdough bread toasted in olive oil
    • 1 tbsp minced anchovies
    • 1 cup olive oil
    • sea salt
    • bundle of fresh basil chopped
  • Instructions:

    • Kids Prep: Kiddo can help measure olive oil or white wine. If you have kid safe knives they can help chop tomatoes. Put them to work squeezing lemons. Have fun together skewering shrimp. Let the little one break apart the basil leaves.
    • Adult Prep: Mince all of the garlic. Chop lemon in half. Put together quick marinade for shrimp - 2 cloves of the garlic, white wine, 1/2 cup oil, chopped basil, 1/2 lemon squeezed, sea salt. Set aside. Chop tomatoes, toast sourdough toast, mince anchovies. Toss the rest of the olive oil and lemon with tomatoes, sourdough toast pieces, anchovies, basil, and sea salt. Grill shrimp for a minute or two on each side and serve with tomato salad.
