Recipe Name: Gold Beet Salad

  • prep time: 30 minutes
  • Servings: 4

    Ingredients:
    • 1 lb gold beets peeled and cut into rounds
    • 1/4 red onion shaved into thin slices
    • 2 celery stalks cut into thin slices
    • equal parts red wine vinegar and olive oil (1/4 cup each)
    • dash of agave
    • salt and pepper
    • chopped cilantro or italian parsley to garnish
  • Instructions:

    • Kids Prep: Cut the celery and herb garnish with butter knife or kid safe knife. Whisk dressing ingredients together (oil, vinegar, and agave) and pour over salad.
    • Adult Prep: Peel beets. Cut into rounds. Boil for 10 miutes. Layer all veggies in bowl. Pour dressing over veggies and make sure they are all covered. Best if let marinate in refridgerator for a few hours. Garnish and serve.
  • Wine Pairing: Rosé

  • Notes: Salad holds well for a few days. I love eating this over a bed of greens at lunch or as a side dish to protein at dinner.
