Recipe Name: Watermelon Avocado Arugula Salad

  • prep time: 15 minutes
  • Servings: 4

    Ingredients:
    • 1 pack organic arugula
    • 2 cups chopped pieces of watermelon
    • 1 1/2 cups chopped pieces of avocado
    • 1/4 cup peeled lightly salted pistachios
    • 1/4 cup olive oil
    • juice of 2 limes
    • 2 tbsp raw honey
    • sea salt
  • Instructions:
    • Kids Prep: Using a citrus squeezer, get lime juice out. Little chefs love mixing the dressing with a whisk. For older kiddos, use a kid safe knife to chop watermelon (skin off first).
    • Adult Prep: Prepare dressing in bottom of salad bowl. Lime, olive oil, salt, honey. Whisk together. With assistance of kiddos, mix in the greens. Prep the toppings... chop avocado, watermelon, pistachios. Layer on top of salad. Serve with protein of choice.
