Mediterranean Chicken

Marinate ahead and grill up easy at dinner time! We used a blend of spices to season the chicken. Harissa is a Tunisian red chili based spice that adds a good kick to the poultry without making it too hot to eat. Tastes great with grilled pita, hummus, arugula and roasted red peppers.

Recipe Name: Mediterranean Chicken

    Ingredients:**
    • 1 1/2 lb chicken breast sliced into thin tenders
    • 3-4 cloves garlic minced finely
    • sea salt, harissa, cumin, and paprika (enough to coat all sides of chicken tenders
    • 1 lemon sliced into thin wedges
    • 1/4 cup olive oil
    • Optional: Arugula, toasted pita to garnish, hummus, and roasted red peepper to serve with chicken
  • Instructions:
    • Kids Prep: Kiddo can tenderize the meat and the season all sides with spices. Layer lemon slices on top. They also love using a basting brush to "paint" the bell peppers with olive oil for roasting.
    • Adult Prep: Cut up the chicken prior to kiddo seasoning. Supervise while kiddo tenderizes and seasons. Add minced garlic to marinade. Pour olive oil on top of chicken and let sit in fridge all day. Grill up chicken and bell peppers. Peel charred skin off bell peppers. Serve with optional sides for a colorful, tasty, and easy meal!
