Beef Short Ribs

Cooking as an entire family excites the little ones to be even more engaged in the kitchen. Keep the recipe simple to start. Put dad to work! On this episode, Quinner seasons the meat (great for any age), Scotty chops onions and garlic, and I lead the way.

Recipe Name: Beef Short Ribs

* prep time: 15-20 minutes

* cook time: 2 1/2 hours

* Servings: 4**

** Ingredients:**

- 2 lbs bone in beef short ribs

- 4 cloves garlic minced finely

- 1 white onion chopped into small squares

- sea salt and cracked black pepper

- 1/3 cup balsamic vinegar

- 1/4 cup olive oil

- 2 cups beef stock

- fresh rosemary sprigs (2-3)

* Instructions:

- Kids Prep: Kiddo can season all sides with spices while dad chops the onion and garlic. Little ones can also help with measuring oil, vinegar, and stock.

- Adult Prep: Heat oven to 300 degrees. Also heat Dutch oven on stove top to medium high heat with olive oil. Sear all sides of meat and add onions/garlic to cook for a few minutes. Pour in balsamic. Pour in beef stock. Add rosemary sprigs. Cover and cook slowly for 2 1/2 hours in oven until meat is tender and falls off bone.

* Wine Pairing: French red from Rhône or Bordeaux

* Notes: Tasty with mashed potatoes!
