Butternut Squash - Kale Salad

Two of my favorite fall veggies in one dish… butternut squash and kale are hearty and delish. Garnish with some chives and chopped bacon and the kids will love!

Recipe Name: Butternut Squash Kale Salad

  • prep time: 10 minutes
  • cook time: 20 minutes
  • Servings: 4

    Ingredients:
    • Chopped Tuscan kale
    • Cubed butternut squash
    • Chopped green onions
    • Applewood smoked uncured bacon cut up into bits
    • 1/4 cup + 2 tbsp olive oil (1/4 cup for cooking veggies + 2 tbsp for dressing)
    • 2 tbsp tahini paste
    • 1 1/2 tbsp soy sauce
    • 1 tbsp rice wine vinegar
    • 1 tbsp honey
    • dash of water
  • Instructions:
    • Kids Prep: Little chef can assist with chopping butternut squash once prepared into flat rounds with a kid safe knife. Chopping green onions and kale might be easier. They can also assist with layering bacon on a sheet tray for baking in oven at 375 degrees. Get out the measuring spoons and practice math with the little ones to make the dressing (last 6 ingredients). They love using a whisk to mix the dressing as well!
    • Adult Prep: Assist with cutting and prepping veggies. Saute kale and butternut squash separately over medium heat until softened. Cook bacon in oven at 375 until desired level of crispy. Green onions will be raw on salad. Layer kale then squash and top with bacon and green onions. Whisk together oil, tahini, soy, vinegar, honey, and a touch of water. Drizzle over salad. Enjoy!
