Recipe Name: Chicken Korma

    Ingredients:**
    • 1 lb chicken breast cut up into bite size pieces
    • 2 tbsp coconut or avocado oil
    • 3-4 cloves garlic minced
    • 1 tsp minced ginger
    • curry powder and salt (coat each chicken piece thoroughly
    • 1 can coconut milk or cream
    • 1-2 tbsp agave
    • 1/2 cup unsalted cashews
    • minced cilantro to garnish
  • Instructions:
    • Kids Prep: With kitchen tongs, kiddo can assist with simultaneously tossing chicken bites and seasoning on each side. With a kid safe knife, they can help with chopping cilantro as well.
    • Adult Prep: Help kiddo coat chicken with spices. Melt coconut oil in pan over medium high heat and sear chicken for a minute or so on each side. Reduce heat to simmer. Add ginger, garlic, coconut milk, agave, cashews and cook for another 30 minutes on lowest heat. Garnish with cilantro. You can also add more turmeric, coriander, and cumin for added flavor. Tastes better the longer it sits!
  • Wine Pairing: Dry Riesling or Pinot Gris
  • Notes: Serve with rice and choice of roasted veggies.
