Spiced Red Lentils

Spiced Red Lentils are delicious and nutritious; high in fiber and protein! Quinner tries an uncooked lentil on the video below and it’s hysterical!



Recipe Name: Spiced Red Lentils

  • Servings: 4

    Ingredients:**
    • 1 1/4 cup red lentils
    • 2 cloves garlic minced
    • 2 tsp minced ginger
    • 1 tsp sea salt, cumin, coriander, turmeric
    • 2-3 tbsp coconut oil
    • 1/2 can diced tomato
    • 3 cups bone broth
    • Chopped Italian parsley or cilantro to garnish
    • Optional - add in roasted sweet potatoes and onions once lentils are cooked
  • Instructions:
    • Kids Prep: Kiddo can assist with opening can, measuring ingredients into saucepan, and stirring. If adding in sweet potatoes, kiddo can scrub with veggie brush prior to roasting.
    • Adult Prep: Use microplane or knife to mince onion and garlic. Melt coconut oil in saucepan. Supervise while kiddo opens can, measures ingredients, adds spices, and stirs. Once all ingredients have been combined in saucepan, transfer to stove and simmer for 25 minutes or until cooked through. Garnish.
  • Wine Pairing: Dry Riesling or Pinot Gris
  • Notes: Great side to protein of choice for dinner.
