Thai Red Curry

Recipe Name: Roasted Cauliflower

  • Servings: 4

    Ingredients:**
    • 2-3 tbsp red curry paste
    • 2 tbsp oil (coconut, avocado, or olive)
    • 16 oz coconut milk
    • 16 oz bone broth
    • 1 lb shrimp, can of chickpeas, or chicken cut into bite size pieces
    • chopped veggies like broccoli, red bell pepper, cubed sweet potato
    • Fresh lime wedges, chopped thai basil or cilantro to garnish
  • Instructions:

    • In large pot, melt oil and whisk in curry paste. Pour in coconut milk and bone broth and simmer. Prep your protein of choice by cooking in saute pan. Roast or saute veggies until cooked. Combine protein and veggies and pour into curry sauce. Let simmer for 5-10 minutes. Serve over bed of rice with herbs and lime wedges as garnish.   • Wine Pairing: Rosé

  • Notes: Add more or less curry paste depending on desired level of spice.
