Recipe Name: Curry Kale Salad

    Ingredients:**
    • 2 heads Tuscan kale finely chopped
    • olive oil to coat kale leaves
    • 1 avocado pitted and cut into small pieces
    • 1 cup golden raisins
    • 1 cup chopped walnuts
    • 1/2 cup shaved red onion marinated in red wine vinegar
    • 3 tbsp tahini
    • 2 tbsp water
    • 1 lemon squeezed
    • 1 clove very finely minced garlic
    • 1-2 tbsp agave
    • 2-3 tsp curry powder
    • sea salt
  • Instructions:

    • Kids Prep: After kale has been rinsed and chopped, have kiddo massage leaves in olive oil. This will break down the bitter component.Wash hands. Help prepare dressing or break apart walnuts.
    • Adult Prep: First chop and rinse kale leaves. While kiddo massages the salad in olive oil, chop red onion and soak in red wine vinegar. Prepare avocado. Assist kiddo with whisking dressing (tahini, water, lemon, garlic, agave, curry powder, sea salt). Pour in dressing with kale already coated in oil and mix thoroughly. Best if let stand in refridgerator for a few hours. Add garnishes and serve
