Weeknight Asian Salmon + Leftovers

Recipe Name: Asian Salmon

  • cook time: 10 minutes
  • Servings: 4

    Ingredients:**
    • 4 wild salmon fillets
    • 1/3 cup honey
    • 1/3 cup soy sauce
    • 2 tbsp rice wine vinegar
    • 1 tbsp minced ginger
    • ghee or coconut oil for pan fry
    • lime wedges and chopped green onions to garnish
  • Instructions:

    • Kids Prep: Any hour of the day, have kiddo help measure ingredients and whisk for sauce (all items above except salmon, oil, and garnishes). Great activity to do with older kid as younger one naps or do squeeze in quality time before work. 10 minutes total.
    • Adult Prep: Assist kiddo with making sauce at any point of day. Preparing in advance will allow for salmon to be ready in 10 minutes at dinner hour! Pan fry salmon fillets in oil on high heat for about 10 minutes. Add the sauce into the pan during the last minute or so. Garnish with lime and chopped green onion.
  • Wine Pairing: Dry Riesling

  • Notes: Easy weeknight meal. Serve with quick rice. If you have leftover salmon, I load up corn tortillas with excess salmon, sliced red bell pepper, chopped cilantro, avocado, and spicy mayo (avocado mayo+sriracha) and squeeze lime on top.
