This is a great salad to take on the go for lunches, picnics, or combine with protein of choice for dinner.

Recipe Name: Lentil Tomato Salad

  • prep time: 10-15 minutes
  • Servings: 4

    Ingredients:
    • 1 1/2 cups pre cooked lentils
    • 1 cup grape tomatoes cut in half
    • 1-2 cloves minced garlic
    • 1/4 cup olive oil
    • 1/4 cup red wine vinegar
    • salt and pepper
    • 2 tbsp minced basil
  • Instructions:
    • Kids Prep: With a kid safe knife, cut grape tomatoes in half. If younger than 4 or 5, kiddo can help season with salt and pepper or measure ingredients.
    • Adult Prep: Chop tomatoes, basil, and garlic. Combine all ingredients above and supervise little chef.
