Grilled Cauliflower Salad

Cauliflower is great in any season… I love this salad with grilled cauliflower both warm and chilled. Can last in the refrigerator for a few days.

Recipe Name: Grilled Cauliflower Salad

    Ingredients:
    • 2 heads cauliflower cut up into florets
    • sea salt, harissa, and turmeric to coat florets
    • 1/4- 1/2 cup olive oil (enough to coat florets)
    • 2 tbsp minced garlic
    • 1/4 cup chopped red onion
    • 2-3 tbsp red wine vinegar
    • 1 cup grape tomatoes cut in half
    • 1/2 cup dried apricots chopped finely
    • 1/4 cup basil chopped finely
  • Instructions:
    • Kids Prep: Little chef can assist with breaking apart the florets, seasoning the florets, and using a kid safe knife to chop tomatoes in half or mince up basil.
    • Adult Prep: Pre-heat grill to medium heat or oven to 400 degrees. Cut the cauliflower into florets. Mince garlic. With kiddo, season with spices and coat with olive oil. Layer cauliflower onto sheet pan and grill or roast for about 30 minutes. Meanwhile, mince red onion and soak in red wine vinegar. Chop tomatoes, apricots, and basil. Combine all ingredients once cauliflower comes off the grill or out of the oven.
