Weeknight Petite Potato Medley

Good potatoes remind me of France. And Germany. And they aren’t just good potatoes over in that side of Europe... they are really GOOD potatoes. Like the kind that just sorta melt in your mouth and have a slight taste of Earth. I’d go to farmers markets when we lived over there. The potatoes would come covered in dirt and so rich in color. You barely had to do anything to prepare them and they just tasted so delightful when roasted or boiled. They are the perfect side to your roasted chicken, sautéed salmon, or grilled pork tenderloin!⠀

Boil potato medley in chicken stock until softened. Turn off heat. Drain. Add back to pot with minced garlic. Generously coat in good olive oil or (vegan) butter. Season with salt. Garnish with chopped green onion.
