Ingredients:
- 1 lb zucchini sliced into thin strips
- 2 tbsp minced garlic
- 2 tomatoes chopped
- 1/2 red onion sliced thin
- 2 tbsp capers
- 3-4 tbsp olive oil
- 3-4 tbsp white wine vinegar
- za'tar seasoning
- Instructions:
- Kids Prep: Little chef can assist with chopping tomatoes and seasoning the finished salad with za'tar.
- Adult Prep: Using a sharp chef knife or mandolin, cut zucchini into thin strips. Mince garlic. Sauté zucchini with garlic in olive oil over medium heat for a few minutes on each side until softened. Set aside. Slice red onion thin, place into small cup, and soak in vinegar for a few hours. When ready to serve, chop tomatoes. Serve zucchini with chopped tomatoes, capers, pickled red onion, and garnish with za'tar.
Wine Pairing: Falanghina or another crisp Italian white wine.
