Orange Fennel Salad

Recipe Name: Orange Fennel Salad

  • Servings: 4

    Ingredients:**
    • 1 head butter lettuce rinsed and chopped
    • 1 orange peeled and separated
    • 1 cup lightly salted pistachios
    • 1 avocado chopped into small pieces
    • 1 fennel bulb sliced and sauteed in olive oil until soft
    • 1/4 cup chopped fresh basil
    • season with sea salt & pepper
    • 1/4 cup olive oil
    • 1/4 cup white wine vinegar
    • 2 tbsp honey
  • Instructions:

    • Kids Prep: Cut off the end of an orange and let kiddo peel (and eat) as they separate pieces. Let kiddo assist in whisking the dressing (olive oil, vinegar, honey)
    • Adult Prep: While the kiddo peels the orange, chop the fennel and saute. Let fennel cook in fridge for about 10 minutes prior to serving salad. Chop the basil, avocado and butter lettuce. Assist kiddo in measuring for dressing. Toss the salad first and then layer toppings.
  • Wine Pairing: Pinot Gris

  • Notes: Great restaurant style gourmet salad to enjoy for lunch or add protein and eat for dinner.
