Recipe Name: Spanish Patatas Bravas

  • cook time: 20 minutes (cook while you prep)
  • Servings: 4

    Ingredients:**
    • 4-5 yukon gold potatoes chopped into small chunks
    • olive oil (qty varies but need enough to coat pan for frying potatoes)
    • sea salt & cracked pepper for seasoning
    • 2 tbsp avocado mayonnaise
    • 3 cloves garlic minced and sauteed
    • juice of 1/2 lemon
    • 1/2 can diced tomatoes
    • 1/2 white onion chopped and sauteed
    • 2 tbsp red wine vinegar
    • 1-2 tsp smoked paprika
    • 1 tbsp hot sauce
    • garnish with cilantro
  • Instructions:

    • Kids Prep: Add 1 clove minced garlic, lemon, and mayo to bowl and let kiddo whisk until aioli is made. Next, let the kiddo add tomato, onion, remaining garlic, hot sauce, dash of salt, and paprika to food processor or blender. Kids love pushing buttons!
    • Adult Prep: Dice potatoes into small 1 inch chunks. Layer pan with olive oil and start cooking on low heat with lid on while you prepare sauces. In another pan, saute garlic and then saute onion until soft. Add red wine vinegar to onion at the last minute. Assist kids with preparing aioli and tomato sauce. Once the sauces are prepped, set aside and keep separate. Increase heat on potatoes and add oil as necessary. Flip every few minutes until cooked through and crispy. Layer potatoes in bowl first, then drizzle tomato sauce. Drizzle aioli next. Garnish with italian parsley or cilantro.

  • Notes: Perfect as a side dish to flank steak, grilled shrimp, or as the main course (add black beans)
