Recipe Name: Colorful Bean Salsa

    Ingredients:**
    • 1 can garbanzo, cannelini, or pinto beans - rinsed and drained
    • 2 roma tomatoes chopped finely
    • 1/4 cup red onion chopped finely
    • 1 clove garlic minced finely
    • 1 lemon or lime squeezed
    • 1/4 - 1/2 cup olive oil
    • season with sea salt
    • Chopped Italian parsley or cilantro to garnish
    • **Optional ingredients to add: 1 chopped English Cucumber and/or 1 can sweet corn drained and rinsed
  • Instructions:
    • Kids Prep: Two stations. Phase 1: Older kids chop tomatoes and cucumber with kid safe knives or butter knives. Young kids rinse the beans and corn with strainers. They can also use veggie brush to clean cucumber. Phase 2: Older kids assist with pouring all ingredients into a bowl. They can measure olive oil and pour in as well. Young kids stir and mix ingredients together.
    • Adult Prep: Open can of beans. Chop onion and garlic. Assist kid with other steps to mix all ingredients into bowl.Squeeze lemons.
  • Wine Pairing: California Rosé
  • Notes: Tastes best after sitting for a few hours to marinate with all of the flavors. Can hold in fridge up to two days. Eat with tortilla chips. Other healhty options include: with eggs in the morning, over a bed of greens at lunch, or with your protein at dinner.
