Recipe Name: Weeknight Lemon Tahini Quinoa Bowls

  • Servings: 4

    Ingredients:
    • veggies: shredded carrots, chopped bell pepper, cherry tomatoes, chopped green onion, chopped cilantro, cut up avocado, field greens, and/or sauteed kale.
    • protein: cooked lentils, bacon strips, cut up chicken, shredded cheese, etc.
    • cooked quiona or rice as base of bowl
    • 2 tbsp tahini paste
    • 1 lemon juiced
    • 2 tbsp raw honey
    • 1/4 cup olive oil
  • Instructions:
    • Kids Prep: Little chef can assist with chopping bell peppers that have already been seeded and prepared into strips. Kids are great assistants when it comes to home-made salad dressings! They can use the citrus squeezer to get the lemon juice out, a whisk to mix the ingredients, and colored measuring cups to practice math.
    • Adult Prep: Cook any veggie or protein that needs to be sauteéd... kale, chicken, bacon, etc. Cut up into bite size pieces that can be added to salads with ease. Take the lead with your little sous chef on whisking the dressing. Use measuring cups for tahini, lemon, honey, olive oil. Little chef whisks these 4 ingredients. Build bowls over quinoa and dress the salad.
